About the keyboard and mouse:

OWC often has discounts on the full size wired Apple keyboard, I think I picked one up for about 17 bucks or something.

At one point during college I got carpel tunnel in my right wrist, and tennis elbow in both arms. The fix was two parted: I started using a Magic Mouse in addition to my trackpad, forcing me to vary my hand positions, and for paddling I switched to using a bent shaft for whitewater. I found that using the Magic Mouse was better than using a regular mouse as I didn't try to adapt my hand to the shape of the mouse and rather just let the mouse 'float' beneath my hand.

Also check out BetterTouchTool for more options than Magic Prefs.
